My Best Homemade Chicken Salad is low fat, low in calories, and low in carbs. As a result, this would make a great lunch and still fit in with your diet plan. While I used Kraft Fat Free Mayonnaise, some would use avocado oil or paste. Any of those should work just fine with this recipe.

The Best Homemade Chicken Salad | Low Fat, Low Calories, & Low Carbs
Serving Size = 3
Calories = 847 (per serving = 282.3)
Fat = 31.18 grams (10.39 gr per serving)
Carbs = 61.56 grams (20.52 gr per serving)
protein = 91.48 grams (30.49 gr per serving)
What you will need to make my Best Homemade Chicken Salad:

9 ounce cooked Chicken Breast, pulled (Cooklite Aero Fryer works great!)

1 Boiled Egg, Chopped
-
2 TBSP Sweet Pickle Relish
-
1/2 cup Kraft Mayo Fat Fee
-
1/2 cup Plain Greek Yogurt
-
1/3 cup Red Seedless Grapes, sliced (optional)
-
1 TSP Brown Spicy Mustard
-
1 TSP lemon Juice
-
1/3 cup Chopped Onion, fine (optional)
-
1/3 cup Walnuts, chopped
-
Italian Seasoning to taste
-
Dash of Cayenne Red Pepper
-
Paprika to taste
-
Garlic Powder to taste
-
Fresh Black Pepper & Sea Salt
-
Xtreme Wellness by OLE, wrap (Optional = 50 additional calories not included in nutrition facts)

Garnish with Lettuce, tomato, shredded cheese, and sesame seeds (These extras are not included in nutrition facts)
Directions
In a medium size bowl, combine relish, mustard, lemon juice, seasonings, Greek yogurt, Fat Free mayonnaise, sliced grapes, and chopped onion. Mix well with a wire whisk. Add chopped egg and blend into the mixture. Hand pull the cooked chicken breast apart into small string like strands and add to the bowl. Blend and Chill
Serve on a bed of lettuce, on a wrap, or as a sandwich. My Best Homemade Chicken Salad is good anyway you want to serve it!

As I manage my type 2 diabetes, I am always looking for healthy eats to add to my diet. This recipes based on the ingredients and the total calories, carbs, fats, and proteins per serving, seems to fit my billing.
The recipe has some of my favorites such as chicken breast, seedless grapes, walnuts, onions lettuce, and tomatoes to name some. I rarely eat mayonnaise and would substitute avocado made into a paste (a norm for me).
In addition, as a matter of personal choice, I would not use any shredded cheese to garnish. Would eliminating cheese change anything? I would love this recipe over a ‘bed of lettuce’. Another option for me would be as a sandwich with a suitable low-sodium whole grain bread.
Overall, I love the ingredients make-up (with a couple tweaks). The low-fat, calories, and carbs are a huge bonus and will certainly add to its appeal to others. I will certainly be offering you feedback when the opportunity arises. My healthy eating and living is always a priority.

Thanks so much for the thorough feedback. I love avocado! I’ve never heard of making it into a paste so it can be used as a substitute for mayonnaise. I love that idea and will have to look into it. I first tried this recipe using 1 cup of Greek yogurt and no mayo. It just didn’t taste right, so I used the fat free mayo.
I really didn’t calculate the shredded cheese into the nutrition facts since I only added that as a garnish and didn’t specify the amount to use, so eliminating the cheese would not change anything. Substituting the avocado paste in the place of the Kraft Fat free mayonnaise may alter the nutrition facts slightly, as I’m sure you would expect.

I like this recipe, my daughter is on a low carb kick, I already eat low carb from allergies, but this recipe will be easy for me to adapt to my allergies and I love recipes like that. with summer coming up and not wanting to heat up the house this sounds like a winning recipe. Does this recipe keep well if I make it a day or two in advance or would it be able to be frozen and thawed for lazy summer meals??
