This soup recipe is awesome, but when you make it into Minestrone soup, Mexican Chicken soup, Greek Fish Stew, and Southwest Chili just by adding new ingredients, it becomes even better.

Whole Foods Diet Plan; 7-Day Basic Veggie Soup
The soup is easy to make and makes up to 7 meals when adding other ingredients to it each day per the diet plan.
It's easy, delicious, and the preparation for it doesn't take to long.
Little by little, I will post more about this diet plan as I'm on it myself, and like to share my real-life photos of the foods included in the diet plan.

7-Day Basic Veggie Soup Recipe
Prep time: 40 minutes / Total Time: 1 hour, 10 minutes / Makes 28 cups
Ingredients:
- 1-pound carrots, sliced
- 3 medium onions, chopped (1 1/2) pounds)
- 4 stalks, celery, sliced
- 2 large cloves of garlic, crushed with a press or food processor
- 2 cans (28 ounces each) whole tomatoes in juice (Stewed tomatoes may be easier)
- 1/2 small head green cabbage, thinly sliced (1 pound)
- 3/4 pound green beans, each trimmed and cut into thirds (save time and buy frozen)
- 1 can (48 ounces) chicken broth (optional – use chicken broth cubes; boil in water per instructions until dissolved)
- 6 cups of water
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 medium zucchini, sliced in half-moons (1 1/4 pounds)
- 2 bags (8-9 oz. each), baby spinach leaves
To Prepare
7-Day Basic Veggie Soup
- Coat a 12-quart stockpot (or 2 large saucepans) with nonstick cooking spray.
- Place over medium-high heat, and add the carrots, onions, celery, and garlic; cook for 8 minutes or until the vegetables soften, stirring occasionally.
- Add the tomatoes with their liquid breaking up the tomatoes with the side of a spoon.
- Add the cabbage, green beans, broth, water, salt, and pepper; heat to boiling over high heat, stirring occasionally.
- Reduce the heat to low; cover and simmer for 10 minutes, stirring occasionally.
- Increase the heat to high; stir in the zucchini and spinach and heat to boiling.
- Reduce the heat to low; cover and simmer for 10 minutes or until all the vegetables are tender.

Great post and recipe. I will definitely try it though I am very careful about which bouillon cubes I use as many are loaded with MSG. It is really hard once in your 40’s to take off weight like when we were younger.
How have you gotten started? I was on noom and it works. I need to get back on that plan.

As for the 7-day soup diet, yes I’m doing the soup diet now. This will be my second week. The food is delicious, especially the lunches and dinners.
I haven’t noticed much in the way of weight loss yet, but I had surgery in September and gained 10 pounds from being out of work and not able to move around much.
So, I think the diet will take me some time. I just started walking on my treadmill again and back to work last night (1st night back after 8 weeks out). I work 3rd shift and now I’ll have to readjust my sleep schedule again.
Hopefully, I’ll start to lose weight this week, but probably have a better chance, starting next week.
MSG is new to me. I’ve always meant to research that, but haven’t yet.
You can buy low sodium chicken broth in cartons as well. I just know my mom has always used the cubes, so that’s what I used. Maybe I’ll try the store-bought next time I make a new batch of soup which will be very soon.

Devara, thank you for your reply. Noom is a great program. You get personalized coaching with it as well. I didn’t think I would be able to do well on it but I did. They make it easy to track calories. Really, you can eat what you want if you stay within your daily caloric target.
I am hoping that you provide us updates on how the soup diet is going. I find that many times I just need a change in approach in order to jump start myself. And, yes, the big brand commercial cubes are loaded with MSG. There are some natural ones, including liquid bouillon in a jar, that are MSG free.

No need to apologize! From what the title reads, most would assume that eating soup all week for every meal was the diet program. But in this case, it isn’t that way.
The Amazing Soup Diet Plan, “Plan” being the keyword, is just that. The basic vegetable soup will be part of every dinner, but there are breakfast and lunches planned out for you as well.
This diet is so easy because it’s whole foods that keep you full and they are actually very delicious! I’m on my 2nd week eating this diet plan and love it.
They even have a section for on going weeks, swapping foods with different foods so that you won’t get tired of the same thing, as well as healthy snacks to eat in between meals.
As a bonus, well I feel like it’s a bonus, there are many dinner recipes that are “Star Chef” recipes. I haven’t had a chance to try any of them yet, but here there are recipes for healthy; Emeril Lagasse’s Creole Super Soup, Lidia Bastianich’s Mussel Super Soup, and Ming Tsai’s Hot-and-Sour Super Soup.

The entire menu is great, but I highly recommend the lunch; Caprese Salad, especially with Roast Garlic Hummus, found at Aldi’s (if you have one of those in your area).
